Curried Onion and Ginger Soup

SERVES 6

Caramelized onions, ginger, and curry mingle in this fragrantly rich soup.

2 tablespoons coconut oil

2 pounds Walla Walla, Vidalia, or another sweet onion

1½ teaspoons Madras curry powder

½ cup finely grated ginger, skin removed

1 small jalapeño, seeded and chopped

1 cup dry white wine

3½ cups coconut milk, divided into two portions

4 cups chicken or vegetable stock

2 tablespoons lime juice

½ teaspoon microplaned lime zest

sea salt and a twist of pepper to taste

Garnish: julienned basil leaves

In a large saucepan over medium heat, melt the coconut oil. Add the onions, curry powder, ginger, and jalapeño and cook until the onions are caramelized. Add the wine, stock, and half of the coconut milk. Simmer the mixture for 15 minutes. Remove from the heat and let cool about 10 minutes.

In a blender puree the soup in batches until very smooth. Return the soup to the saucepan and reheat, adding the other half of coconut milk, lime juice, and zest. Season the soup again with more salt and pepper to taste.

To serve, ladle the soup into bowls and garnish with the julienned basil leaves.
